
Prep Time: 2 hours, Cook Time 20 min
Preheat 425 degrees, prepare lined muffin pan. yeild one dozen (12 muffins)
120g All Purpouse Flour
120g Raisins
1 1/4 tsp Baking Powder
1/2 tsp Baking Soda
3/4 tsp Ground Cinnamon
1/2 tsp Salt
170g Oatmeal
1c (240 ml) Whole Milk
1/3c (80ml) Vegetable Oil
100g Granulated Sugar
1Tbs Molasses
2 Large Eggs
In a covered bowl, soal the oats in milk overnignt (minimum of 2 hours)
This recipe calls for a change in temperature mid bake. Preheat the oven 425 degrees.
In a medium bowl, combine Flour, Baking Powder, Baking Soda, Salt & Cinnamon and set aside
In a large bowl, combine eggs, oil, sugar, & molasses
Add the oatmeal mixture from the refrigerator and stir well.
Add the raisins to the mixture, be sure to separate any clumps.
Add half the dry ingredients to the mixture until just blended then add the remaining dry ingredients and stir until wet.
Fill the prepared cups with 1/4 cup mix (no more than 3/4 full)
Bake at 425 degrees for 7 minutes
Reduce temperature to 350 and bake for an additional 12-15 minutes until cooked through.
